They tend eleven clones of Sauvignon Blanc, Sauvignon Gris and Semillon. Every cluster was inspected for defects. After being whole-cluster pressed, this wine was 100% barrel fermented; 20% of the total saw stainless steel barrels, while 80% was in French oak. Both rich and elegant, the lush floral aromas of honey suckle and kaffir lime combine with a vibrant band of gooseberries and tropical fruit. The wine is lengthy, persistent, and represents an evolutionary leap in winemaking.

This is extreme wine country with rare limestone soils, limited rainfall and wide diurnal temperature swings. The unique terroir produces wine that imparts a subtle mineral character with compelling fruit and richness. By California standards, Chalone Vineyard's grape yields are small (less than three tons per acre), but the grapes from this vineyard achieve homogeneity of ripeness and display intense character and superb balance. The new Pinot Noir clones, planted in 1997, are really showing their potential with the 2005 vintage. The wine is darkly colored and amazingly opulent, with fantastic fruit intensity leaning toward red cherries and strawberries. Firm in body, with big tannins, this wine has amazing texture and length of finish. The ten months it spent in French oak integrated the fruit and tannins into a truly hedonistic glass of wine. Pair with roasted turkey, seared duck with cherry sauce, grilled salmon and wild mushroom risotto.

White Wine by Chalone from Central Coast, California. The 2005 Pinot Blanc was whole-cluster pressed with no crushing or destemming of the grapes. The 21-day fermentation took place half in barrel with natural yeast, and half in stainless steel, inoculated with yeast. The wine was then aged for 9 months in French oak barrels to enhance the finish. Leaving the wine on the lees adds the signature hazelnut character typical of Chalone white wines and builds roundness and finish. This lovely wine offers bright flavors of crisp apple and brioche. It has a wonderful smooth and creamy texture, medium to full body and balanced acidity. Enjoy it on its own as an aperitif before a meal, or paired with chicken salad with tarragon and walnuts, poached dilled salmon or creamy pasta Alfredo.

Due to the large percentage of Robert Young Vineyard Chardonnay in this blend, only 50% of the final blend underwent malolactic fermentation as the Robert Young Chardonnay component is kept a nonmalolactic wine. This medium-bodied Reserve Chardonnay opens with pleasing aromas of Bosc pear, lemon candy and nutmeg. Unctuous notes of creamy lemon bar and kiwi fruit are backed by subtle hints hazelnut, baking spice and mineral characters.
